How to make biltong
Ingredients to make Biltong (500g Biltong) - This is general and not The Shack's top-secret recipe.
1.2 kg Beef Silverside joint (this is a cut of meat similar to the topside and perfect for Biltong or a roast. Remember when curing, the beef will shrink to about half the size
2.5 tbsp vinegar (malt or apple cider)
2.5 tbsp coarse salt
1.5 tsp crushed peppercorns
1.5 tbsp lightly toasted coriander seed
1 tbsp brown sugar
Extras you can add
1 tsp Garlic powder
1 tsp Cayenne Pepper
1.5 tbsp Worcester sauce
Let's get making
Cut your silver-side into 1 inch thick slices and place in a large sealed tupperware. Leaving the fat on. Pour the salt over the meat, pop in the fridge for 1 hour. Take the meat out and roughly strip the salt using the vinegar.
Add the crushed peppercorns, coriander, and any other spices you fancy from the extras list to the meat and massage through all pieces. Seal and pop in the fridge and leave to marinate for 3 hours.
Now it's time to hang/cure your meat. Pop the sticks in your drier, hanging by hooks and it should take around 3 days to cure depending on how you like your biltong.
