The Biltong Shack Cooking Club: Biltong Rice
Here's a tasty Biltong recipe bursting with flavour for you and your family and friends to try.
Ingredients (Serves 4 hungry Biltong lovers)
1 x 250g Traditional Shack Biltong Sharer Bag
1 tbsp of oil for frying
2 x tsp paprika
1 x red onion
3 x cloves garlic
1 x chilli (Optional and de-seed if you don't fancy a kick)
150g mushrooms (sliced and diced)
1.5 cup of long-grain rice
125ml dry white wine
600ml stock (we used chicken)
2 x medium tomatoes roughly diced
4 x spring onions (ends removed and sliced)
Salt & Pepper
1 x lemon (optional)
A handful of flat-leaf Parsley
Let's get cooking
Fry up the onions until translucent, then add garlic, chili, paprika, mushrooms, salt & pepper and continue to fry with a touch of stock to make sure that the pan does not stick. Pop in the rice and fry for 30 more seconds and then add in the wine to deglaze and let that bubble away for a couple more minutes.
Now time to turn down to medium heat and add the stock. Let your rice simmer away with the occasional stir and when your rice is almost ready you can add your finishing touches. Slow and steady wins this race.
Turn off the heat, add diced tomatoes, spring onions, parsley, parmesan, a generous squeeze of lemon, and finally the star of the show, the Shack's finest Biltong. Give it a couple more stirs and you are ready to enjoy our vibrant tasty Biltong Shack Rice.
